Inspiration

Toriel is the kind-hearted monster that guides the protagonist of UNDERTALE through the ruins after they’ve fallen down. She invites us into her home, bakes us butterscotch-cinnamon pie, and even stands in our way if we try to leave the safety of her abode. Toriel’s drink also contains a secret ingredient. Can you guess what it is? “Love”, you say? Um, no. It’s more similar to her favorite pie flavor. You know, gooey and slimy snails!

What the Flip?

In all seriousness, there are no snails in this cocktail, but it does use egg white which is close enough to snail slime. Creating a butterscotch and cinnamon-flavored drink was a no-brainer to represent the mother boss monster. But what kind of drink? Papyrus accuses Toriel of allegedly getting a bit too turnt on eggnog, so I figured we use the whole egg for a flip cocktail. A regular flip uses Cognac as its base spirit, so I went with it here as well.


To make things a little more interesting, I played around with a new toy at the time of this writing, a whipped cream maker! Essentially a container that you can charge with gas canisters thereby increasing the pressure in the container. These can naturally make whipped cream, and also foams too! I took a shot at making a butterscotch foam that would go on top of the cinnamon-flavored flip cocktail. It came out incredibly nice!


To make the butterscotch foam in this case, follow this recipe here. This should be enough to top 4-5 drinks:

  • To a whipped cream maker (iSi brand if you’ve got it) add…

  • 3 oz (88 ml) Butterscotch Schnapps

  • 2 oz (59 ml) Water

  • 1 Egg White

  • Seal the whipper and charge with a single N20 cartridge

  • Give the whipper a good shake

  • When ready, hold the whipper upside down with the nozzle facing the top of your drink, and slowly press the lever to dispense the foam


This foam tastes great and has a lovely texture! It doesn’t keep for very long though, so the flavors of butterscotch within it will slowly fall into the cinnamon drink down below. I’ve seen that stabilizers like xantham gum can be used to make the foam stronger so it doesn’t fall apart. I haven’t yet played around enough with this though.



Delta Rune

The delta rune insignia that adorns the glassware of this cocktail is the symbol of the underground! It supposedly alludes to a prophecy where an angel from the surface would make their way to the underground to save the monsters down below. Foreboding, isn’t it? I made a sticker sheet so you can print your own if you’d like to make this drink and decorate it yourself!



Flavor Analysis

A prominent smell of butterscotch precedes a light and sweet butterscotch foam. Sipping further, the flavor of spirit-forward cinnamon melds with the butterscotch as the drink’s texture changes to be thick and rich.

  • 2 oz (59 ml) Cognac (Salignac)
  • 3/4 oz (22 ml) Cinnamon Syrup
  • 1 Egg Yolk
  • Butterscotch Foam

Method: Dry Shake, Wet Shake & Double-Strain

Garnish: Grated Cinnamon
