A tall, light, and handsome drink that's seemingly bubbling over with joy! Or lemon foam of sorts. A long, rubber, yellow straw juts out of the creamily opaque liquid within.

A notorious cocktail exists out there that (according to legend) is the easiest way to get a bartender to hate you. I'd like to say first and foremost, that I do not hate you. I barely know you. And since you ordered this drink and I'm young and naïve and don't know what I'm getting myself into, I think I actually like you a little more than neutral because of the challenge you've requested.


There's not anything particularly hard to get about this particular fizz. It's the long and sought-after foamy head that rises from the glass after a near-perfect execution that is so difficult to achieve. Experts claim that an inordinate amount of time must be dedicated to the dry and wet shaking of this cocktail to ensure this foamy cylinder. Some say that order matters in this mixture. Others say one must use the spring of their strainer (detached from the base) as an additional surface in the shaker.


We tried amidst the chaos of those rumors, and we achieved the cocktail that you see above. There's a head there that just doesn't lie. Evidently, we are damn near perfect 😏


But seriously, all this effort results in a drink that tastes like liquid lemon meringue (or those Girl Scout Lemonade cookies). That's so refreshing and super tasty. Even the foam is tasty!

Ramos Gin Fizz

Ramos Gin Fizz

  • 2 oz (59 ml) Gin (Faber)
  • 0.5 oz (15 ml) Lemon Juice
  • 0.5 oz (15 ml) Lime Juice
  • 1 oz (30 ml) Simple Syrup (1:1)
  • 2 dashes Orange Blossom Water
  • 1 oz (30 ml) Heavy Cream
  • 1 Egg White
  • Top with Soda Water

Method: Dry shake all ingredients except soda water for an indefinite amount of time. After the end of this eternity, begin wet shaking ad infinitude. Double-strain into a tall glass with a bit of soda water in it. Then refrigerate. After a measly few minutes, remove from the cool. Poke a hole in the top of the cream foam big enough to pour the remainder of the soda water to fill the glass. If done correctly, a thick foam should rise from the top of the glass.

Garnish: That foam, dude!
