

I came into possession of some rhubarb from my local farmer's market and immediately whipped up some rhubarb and rose syrup that needed a cocktail to call home.
My inspiration for the Pink Emilico was my love for gin cocktails and some cursory research that I had done about what flavors rhubarb go well with. Nowhere could I find any recipe that didn't mention strawberry, sooo I put some strawberry gin in it as well. My own self-criticism is that Indoggo (the strawberry gin by Snoop Dogg) is a bit too like candy strawberry flavor than the lip-pursing notes of an actual strawberry. Next time I make this syrup, I'll likely add a few frozen strawberries to the mix to just add that flavor from the very beginning instead of adding it via flavored spirits after the fact. You know what? You live and you learn!
When I tasted this drink on stream, I noted that it was very strong on those botanical gin notes, and the slight tart flavor of the rhubarb paired super well with the honey syrup. I also totally blanked on topping it with a bit of club soda to mellow out the flavors a bit. Aaaaand I probably put it in the wrong glass in the context of my original intentions, but enough criticism aside. We put something new into the world, and that's something worth celebrating 😄
On a side note, the syrup cost me the rest of my rose petals and I've got an entire bottle of it still leftover, so recommendations for new and fun ways to use it are greatly appreciated and always welcomed!

- 1 oz (30 ml) London Dry Gin (Beefeater)
- 1/2 oz (15 ml) Rhubarb Rose Syrup
- 1/2 oz (15 ml) Honey Syrup
- 1/4 oz (7 ml) Strawberry Gin (Indoggo)
- Optionally Top with Club Soda
Method: Stir & Strain
