“Until we meet again... friend.” ~ Flowey, UNDERTALE Yellow

Inspiration

Similar to our determination cocktail, JUSTICE represents the yellow SOUL in UNDERTALE. The fan game Undertale Yellow details the adventure of the fallen human, Clover, whose SOUL is this color. Lil’ Clover wields a firearm as their weapon and trots around with a hat and handkerchief. They’re almost like a little cowboy and they’re adorable. This drink pulls inspiration from Clover themselves as well as the themed yellow heart that distinguishes this beverage.

Yellow Ice Heart

I’ve detailed how to create an ice heart and adhere it to a glass on the determination cocktail page, so if you’re looking for the ‘how’, go check there! To put it simply, the liquid that makes the justice ice yellow is an aloe vera-based mango drink. The specific brand of drink you use here doesn’t really matter, but the one I had on hand was this J-Basket brand. I have no idea where I bought this, but it was in my fridge when I workshopped this drink, so I went with it! The drink freezes to a vibrant yellow color, and as the ice melts the sweet flavor of mango leeches into the drink.

The Drink, Pardner

As for the rest of the drink, mango was the flavor to pair with. The drink that goes on top of the ice is based on a Bee’s Knees cocktail. Like the Bee’s Knees, Justice has gin, lemon juice, and honey in it. The honey syrup used here is supposed to be clover honey specifically since it shares a name with Undertale Yellow’s protagonist. To accent the flavor of mango present in the ice heart, a bit of mango liqueur was added to ease that flavor in as the juice ice melts.

Flavor Analysis

The flavor of mango hits hard with a bit of sourness and a hint of booziness. As the ice melts, the texture becomes thicker and the flavor slightly sweeter.
