“Two tiny wings, eyes big and yellow, horns of a steer, but a lovable fellow.  From head to tail, he's royal purple pigment, and there, viola!  You've got a figment!  A Figment of imagination.” - Dreamfinder

Inspiration

Full Name: Figment of Imagination; is the dragon companion of Dreamfinder created from his ideas and sparks of imagination from his travels in the Realms of Imagination. He is prominently featured as EPCOT’s original character for the Journey into Imagination ride. Attempting to imagine the embodiment of imagination as a drink seemed daunting, but we whipped something up using our own imagination! We drew inspiration from our Dreamfinder cocktail and used flavors common to both drinks. Figment, being the mocktail, combines grape, almond, and even wormwood for a layered drink with a whimsical appearance and taste!

Workshopping

From Dreamfinder To Figment

Just as the story goes, the Dreamfinder created Figment from collecting sparks of imagination. We felt it an excellent opportunity to try and make two drinks with similar flavor components, one alcoholic and the other a mocktail. To start, we considered the ingredients present in the Dreamfinder cocktail: rye whisky, amontillado sherry (fortified wine), amaretto (almond liqueur), and absinthe.

Breaking it down a bit, the flavors that we had at our disposal for a non-alcoholic beverage appeared to be: rye, corn, caramel, vanilla (from the whisky), grape, roasted nuts (the sherry), almonds, and wormwood (absinthe). With our palate of flavors ready, I and my co-mixologists got our imagination gears a-turnin’ for the evening!

Using Our Imagination

We decided to pull one flavor from each component with the exception of the whisky (truth be told, we didn’t have any rye or corn, and I felt the caramel and vanilla would be too much). We chose grape flavor for the sherry. Some sparkling grape juice would serve as the base of the drink. Almond naturally corresponded to the amaretto. We experimented with a few drops of almond extract and we were surprised to find that it totally complemented the grape juice! But, what about the wormwood flavor? Well, I had some wormwood from an herb shop a while back, but how to use it?

In my memory, I picture someone grabbing the whipped cream maker and saying, “Can we put it in this?” I can’t remember who it was, but my goodness were they right! While I workshopped some other recipes, two of my cohorts went to work determining the optimal recipe for what we would call our “imagination foam”. Why this name? In addition to Figment being made from ‘imagination’, back then people believed that absinthe (flavored with wormwood) could cause hallucinations. Despite there not being any direct evidence for it, we rolled with the association anyway. Add this “imagination foam” to your drinks for a sweet and slightly bitter topping that might boost your brain skills in skewed ways…

"Imagination" Foam

  • 2 oz (59 ml) Water

  • 0.5 oz (15 ml) Rich Simple Syrup

  • 0.3 g Wormwood

  • 1 Egg White

  • Add all ingredients to a whipped cream maker and charge with an N₂O canister for no more than 30-45 seconds.

  • Invert the whipped cream maker and dispense the foam on top of your drink.

Horns Garnish

The garnish for Figment is spiraled orange peels dried to hold their shape like horns. To create them, I wrapped some thin orange peels around wooden dowels of varying lengths. Cut 3-4 wooden dowels, each about 0.75 inch or about 2 cm shorter than the last one. Wrap the dowels together and twirl the orange peel around it. As you peel around, the width of the peel should get a bit larger with each dowel it passes. I’d recommend dehydrating in a dehydrator if you have one (easier to control the temperature), but you can also put your oven on the lowest setting with the door open or keep each horn it out in the sunlight.

Flavor Analysis

Sweet and effervescent with prominent flavors of tart grape and almond. The foam on top is marshmallow-like and slightly bitter.
