Starting your evening off with something simple might be the best way to go if you're one for easing into a celebratory drinking festival. One such cocktail that comes to mind is the Black Velvet, quite literally an even split between sparkling wine and Irish stout.  


Depending on how you split your ratio, the drink can be catered to the individual. I for one am not as into the sour, sometimes citrusy components of certain light white wines (with or without the bubbles) so I like my pours more heavy on the stout (which I find has more deep chocolate/coffee notes to it).  


If you're St. Patty's pals brought a bottle of nice champagne, this would be an excellent way to use it.
